INGREDIENTS and PROPORTIONS:

1/2 cup soy margarine

3/4 cup honey

1 egg, beaten

1 tsp. vanilla extract

1-1/2 cups fine bran

1 cup whole wheat pastry flour

1 tsp. baking powder

1/2 tsp. salt

1 tsp. cinnamon

1 cup raisins

1/2 cup finely chopped walnuts or pecans

PROCEDURE:

Preheat oven to 375 degrees. In a mixing bowl, cream together the margarine and the honey. Beat in the egg and the vanilla. In another bowl, combine the bran, flour, baking powder, salt, and cinnamon. Work the wet ingredients together with the dry to form a stiff batter. Work in the raisins and nuts. Drop by heaping teaspoonfuls onto a cookie sheet. Bake 10-12 minutes. Cool on a rack.
